Chocolate Avocado Truffles
What You'll Need-
1 medium ripe avocado
¼ cup cocoa powder (sweetened) + 2 Tbsp for dusting
¼ cup coconut oil
¼ cup of honey
Dash of cinnamon
1/2 tsp vanilla extract
What To Do-
1. Line a baking sheet with parchment paper and dust with some cocoa powder.
2. In a medium bowl, mash an avocado. You can use a blender or food processor if you prefer, but mix until smooth. Add in the remaining ingredients and stir until thoroughly combined.
3. Take a small ice cream scooper or tablespoon to form a ball and place on the parchment sheet. Finish off with the remaining cocoa powder.
4. Place in the refrigerator to set for about 20 minutes. Serve at room temperature but store in the refrigerator. For sweeter truffles, you can also dust with powdered sugar.
