Chocolate Chocolate Chip Cookies
What You’ll Need:
½ cup butter, melted
1 cup coconut sugar
2 cups Bob’s Red Mill AP GF Flour
1 tsp. vanilla extract
1 ½ Tbsp. cocoa powder
1 tsp. baking powder
What To Do:
Preheat oven to 350 degrees.
Melt 1 stick of butter over the stovetop or in the microwave. 30 seconds, stir, another 20-30 second.
In a medium bowl, whisk coconut sugar, melted butter, egg, vanilla extract until smooth caramel-like texture results.
Add in flour and baking powder. Then fold in chocolate chips.
Line a baking tray with parchment paper OR this baking mat from GIR.
Place 1 Tbsp. of batter about a ½ inch apart from each other using an ice cream scooper. You might need 2 baking trays depending on size.
Bake for 8-10 minutes. Let cool and enjoy!
