Cocoa Oat Cookie with Coconut Cream

What You’ll Need-

Cocoa Oat Cookie

½ cup coconut flour

½  cup Bob's Red Mill Gluten Free Oats

¼ cup cocoa powder

3 Tbsp coconut oil

2 Tbsp popped quinoa

Filling

½ cup coconut butter

2 tsp honey

2 Tbsp coconut cream *refrigerate a can of coconut milk overnight and take the solid top layer

What To Do-

1. To make the cookies, place all ingredients in the food processor and pulse until thoroughly combined *the result will be a dry mixture. 

2. Take the dough in your hands and form small balls then press slightly to form the mini cookie shape. Place on a parchment paper lined tray and freeze for 5 minutes.

3. Mix the filling ingredients together in a bowl and spread the desired amount on the cookie halves once removed from the freezer. Top with a second cookie half and enjoy!
