Coconut Vanilla Cupcakes
What You'll Need-
½ cup vegetable oil
⅔ cup sugar
½ tsp salt
2 tsp vanilla extract
6 large eggs
2 Tbsp milk or coconut milk
½ cup coconut flour
1 tsp baking powder
½ cup unsalted butter, softened
1 package (8 oz) cream cheese, softened
1 tsp vanilla
3 cups powdered sugar, more if needed
What To Do-
1. Preheat the oven to 350 degrees Fahrenheit. Line a muffin tin and grease the liners for crumble free cupcakes.
2. Whisk together the oil, sugar, salt, vanilla and eggs. Add the milk and stir until smooth. Add the coconut flour and baking soda to the wet ingredients and mix until combined.
3. Fill each liner 3/4 full with batter. Bake for 18-20 minutes until a toothpick inserted in the center of the cupcake comes out clean.
4. Remove the cupcakes and let cool for 5 minutes. Then take the cupcakes out of the tin and place on a cooling rack to cool completely. Frost the cupcakes with your favorite frosting *I chose cream cheese frosting.
