CURRY

What You’ll Need:

Any veggies you like - I’ve used eggplant, broccoli, chickpeas, peppers, kale

1 can coconut milk

1 onion

4 cloves garlic

Lots of olive oil

Rice or quinoa

4 Tbsp. curry spice

2 Tbsp. red curry spice

2 Tbsp. turmeric

1-2 Tbsp. smoked paprika

1 Tbsp. cardamom

Garlic salt to taste

What To Do:

  1. In a medium pot over medium heat brown onion and garlic in olive oil.

  2. Add vegetables in order of what cooks for the longest (I’d add something like peppers, mushrooms or eggplant to the pot before adding chickpeas, spinach or kale).

  3. Add the coconut milk to the pot, and reduce to a simmer.

  4. Once the veggies are cookin, add your spices. Tbh I gave quanities above but I mostly just add stuff to taste. *Don’t be afraid to play with flavor this dish should be bold. Let simmer so all flavors blend.

  5. The most recent time I made this I added quinoa I had in the freezer to the simmer. But you can also just cook rice or quinoa seperately and add in at the end or just add the curry on top.

  6. Eat and share with your friends!
