Healthy Chicken Nuggets

What You’ll Need:

An air fryer. This is mine.

1-2 eggs (I used 2 but had some leftover, start with 1)

1 ½ cups of Bob’s Red Mill Arrowroot Flour

2-3 large chicken breasts

Garlic salt, paprika, thyma and cayenne, all to taste

What To Do:

  1. Plug in your air fryer.

  2. Cut the chicken breasts into nugget size. Make sure not to cut too thin because who wants a dry NUGG.

  3. Crack an egg in a medium bowl. Shell not included *in case that wasnt CLEAR.

  4. In a seperate bowl, add arrowroot flour and all the spices. Feel free to be creative here with spices.

  5. Bread the nuggets as you would regular chicken cutlets. Dip in egg, dip in flour, set aside.

    • Please note: Since the consistency of the flour is super fine, don’t be alarmed if/when the chicken starts to absorb some of the flour.

    • I dusted all my nuggets one more time BEFORE putting them into the air fryer.

  6. Spray your air fryer basket with oil (I used avocado).

    • Please also note: some of the breading WILL stick to the basket. Sorry in advance they still come out great but dont freak out if they stick a little. Spray again in between flipping which may help.

  7. I have a chicken button on my fryer but for those who don’t these are cooked at 370 degrees Fahrenheit for 20 minutes total, flipping the nuggets over with a spatula at the 10 minute mark.

  8. Try not to consume all in one sitting LIKE I ALMOST DID LN.
