SB & J Thumbprint Cookies

What You'll Need:

1 cup 88 Acres Maple Sunflower Seed Butter

2 Tbsp. coconut sugar

1/2 tsp. vanilla extract

1 cup Otto's Cassava Flour

1 Tbsp. coconut flour

About ½ cup coconut milk *I added the coconut milk because my batter was dry, so just add a little at a time until dough-like consistency forms

What To Do:

  1. Use about 1 Tbsp. of dough for each cookie and press down with your thumb in the center.
  2. Freeze for 30 minutes.
  3. Add your jelly to the center. I used Trader Joe's strawberry preserves.
  4. Enjoy/try not to eat the whole tray. Recipe modified from Rachel Mansfield's No-Bake Nut Butter & Jelly Thumbprint Cookies.
